BAMiA

INGREDIENTS

(4-6 servings)

 

  • okra (1/4 pound)

  • onion (1)

  • garlic (5 cloves)

  • tomatoes (4 crushed + 1 sliced)

  • red pepper  

  • olive oil (3 Tbs)

  • scallion (optional)

 

METHOD

 

  • Saute onion, garlic, and red pepper in olive oil over medium heat for several minutes. Add cut-up okra and saute for 5 minutes. 

 

  • Add crushed tomatoes, salt and pepper to taste, and combine well. Place sliced tomatoes on top, and simmer for about 3o minutes. Top with chopped fresh herbs of your choice.​​
