okra (1/4 pound)

onion (1)

garlic (5 cloves)

tomatoes (4 crushed + 1 sliced)

red pepper

olive oil (3 Tbs)

scallion (optional)
METHOD

Saute onion, garlic, and red pepper in olive oil over medium heat for several minutes. Add cut-up okra and saute for 5 minutes.

Add crushed tomatoes, salt and pepper to taste, and combine well. Place sliced tomatoes on top, and simmer for about 3o minutes. Top with chopped fresh herbs of your choice.
