  • onion (1)

  • peppers (3-4)

  • garlic

  • tomatoes (10 - 12)

  • eggs (6-8)

  • olive oil (1/4 cup)




  • Over medium heat, saute onion and peppers with a pinch of salt for about 10 minutes.

  • Add garlic, roughly chopped tomatoes and simmer for about 1 hour, stirring occasionally. 

  • Gently add eggs on top of tomatoes. Cover and cook for about 10 minutes, until whites are set but yolks remain runny. Top with fresh herbs of your choice for some color and aroma.
