Veggied up cabbage

INGREDIENTS

(4-6 servings)

 

  • olive oil (2 Tbs)

  • onion (1)

  • garlic (3)

  • parsnip (3)

  • carrot (3)

  • tomato (3)

  • peppers (2)

  • kale (1 bunch)

  • cabbage (1 head)

METHOD

 

  • In a large pot, heat olive oil over medium heat and add chopped onion and a little bit of salt.  Saute for several minutes. Add chopped garlic, carrots, parsnip, tomatoes and finely cut kale. Saute for 10-15 minutes.

 

  • Add roughly chopped cabbage (cca. 2-inch chunks) and saute for a few minutes. Cover the pot, lower the heat and allow the cabbage to release its juices. Stir occasionally, adding water if necessary to keep the veggies half immersed in liquid. Cook for about 30 minutes or until the cabbage softens. 

 

  • Add salt and pepper to taste and serve with a piece of hearty whole grain bread.
